1/3 cup butter: softened
1/3 cup granulated sugar
1 egg: separated
1 3/4 cups all-purpose flour
zest of 1 orange
zest of 1 lemon
zest of 1 lime
2-4 tablespoons orange juice
Preheat oven to 400 degrees F
Grease 2 cookie sheets or use parchment paper
In a medium bowl, cream together the butter and sugar until light and fluffy, then and the egg yolk, mix until well blended.
Sift the flour over the butter mixture and blend until well combined.
Add the orange, lemon and lime zest and just enough of the orange juice to form a soft dough.
On a lightly floured work surface, roll out the dough and cut out rounds with a 2 1/2 in. round cookie cutter. Use the same cutter and cut out a 1/3 of the round to make the crescents.
Place the crescents on the prepared sheets, prick with a fork and glaze with the egg white.
Place in the oven and bake for 12-15 minutes and remove to a wire rack and cool.
