Makes 24 cookies

1/2 cup (1 stick) unsalted butter
3/4 cup sugar
1 large egg
1/2 teaspoon vanilla extract
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon lemon oil
Zest of 1 lemon
Juice of 1 lemon
1 1/2 cups unbleached all-purpose flour
Yellow gel-paste food color
3 tablespoons granulated sugar for coating

Cooking Instructions:

Preheat oven to 350 degrees F.

Prepare 2 cookie sheets by lightly greasing or use parchment paper.

In a medium bowl, cream the butter and sugar.

Add the egg, vanilla, baking powder, salt, lemon oil, lemon zest, lemon juice and blend on medium speed until well blended.

Add the gel-paste color at this point. Dip a toothpick in the gel and then into the dough. Repeat this until the desired color intensity is achieved (3 times). Use a different tooth pick each time so that the gel doesn't get contaminated with the dough.

Add flour, beat until well blended.

Place the 3 tablespoons of sugar in a bowl. With a cookie dough scoop, drop the dough into the sugar and lightly coat. Gently roll the dough with both hands to form a ball and place on the prepared cookie sheets.

Bake for 12 minutes, until they are barely set in the center for a softer cookie, 14 minutes and slightly browned on the bottom for a crunchier cookie.

Remove from the oven, after a few minutes remove the cookies from the sheet to a rack to cool.
