Makes 6 to 7 dozen cookies
1 cup creamy peanut butter
1 cup all-vegetable shortening
1 cup light brown sugar: packed
1 cup granulated sugar
2 eggs
1/4 cup milk
2 teaspoons vanilla extract
3 1/2 cup all-purpose flour: sifted
2 teaspoons baking soda
1 teaspoon salt
1 (11 ounce) package milk chocolate kisses
Additional sugar for rolling the cookie in
Preheat oven to 375 degrees F.
2 ungreased cookie sheets
In a large bowl, cream together the peanut butter, shortening, brown sugar and sugar until light and fluffy.
Add the eggs, vanilla and milk until well blended.
Sift together the flour, baking soda and salt and spoon into the creamed mixture. Beat on medium speed until well combined.
Using a cookie scoop, form into 1 inch balls, then roll in additional sugar and place on the cookie sheets.
Bake for 7 minutes, remove from the oven and press 1 chocolate candy into each hot cookie. Return to the oven and bake for 4 minutes longer.
Cool on the sheet for one minute and remove to a wire rack to cool completely.
