Makes 3 dozen cookies
1/2 cup shortening
1 cup brown sugar
2 eggs
2 cups flour
1/2 teaspoon cinnamon
1/4 teaspoon soda
Apple filling:
2 cups chopped apples
1 cup brown sugar
1 cup wheat bran
1 tablespoon melted butter
1/2 teaspoon cinnamon
1/8 teaspoon salt
Cream shortening and sugar; add beaten eggs. Add sifted dry ingredients. Chill dough thoroughly. Mix ingredients for filling in order given. Roll out dough 1/4 inch thick; spread with drained apple mixture. Roll up as for jelly roll; cut off 1/4 inch slices. Bake on greased baking sheet at 350 degrees F. for 30 minutes.
