Makes 6 dozen cookies
2 cups flour
1 teaspoon baking powder
1/4 teaspoon each, cinnamon and cloves
1/2 cup shortening
1 cup brown sugar
1 egg
Date filling:
1 1/2 cups pitted dates, sliced
1/2 sugar
1/2 cup water
1/2 cup nuts, chopped
Sift flour, baking powder, salt and spices together. Cream shortening, add sugar gradually. Add unbeaten egg and stir vigorously for 2 minutes. Add sifted dry ingredients. Roll out dough 1/8 inch thick, keeping rectangular shape. (For Date Filling; cook dates, sugar and water to thick paste, stirring often. Cool and add nuts.) Spread Date Filling over dough, roll up as for jelly roll. Wrap in waxed paper and chill several hours. Cut into slices 1/4 inch thick. Bake at 375 degrees F. for 8-10 minutes.
