Makes 2 dozen cookies

1 stick unsalted butter
3/4 cup sugar
1 large egg
1/2 teaspoon vanilla extract
1 teaspoon baking powder
1/4 teaspoon salt
Zest of 1 lime
Juice of 1 lime
1/4 teaspoon lime oil
1 1/2 cups all-purpose flour
3/4 cup sweetened shredded coconut
Green gel-paste food color
3 tablespoons granulated sugar

Cooking Instructions:

Preheat oven to 350 degrees F

Prepare 2 cookie sheets with parchment or lightly grease.

In a medium bowl, cream the butter and sugar until light and fluffy.

Add the egg, vanilla, baking powder, salt, zest, lime juice, lime oil. Beat at medium speed until well blended.

Add the green gel-paste at this time so that it will blend easily. We use 3 different tooth picks dipped into the gel so that the gel does not become contaminated with dough.

Add the flour and coconut until well combined.

Put the granulated sugar in a bowl. Using a cookie scoop, drop the dough into the sugar. Gently roll the dough into balls with your hands. and place on the prepared cookie sheets.

Bake for 12 to 14 minutes. 12 minutes for a softer cookie. 14 minutes for a crisper cookie.

*Use the zest from a light colored lime because the zest tends to darken as it bakes.
